It sounds daunting but it actually isn’t. Pickled red onions add a tangy flavor with its acidity, and the capers provide a salty kick. If capers are not to your liking, there’s no harm in leaving it off. Pairing it with a garnish of cilantro or, if cilantro tastes soapy to you, parsley makes it simple but delightful. You can either buy it or make it yourself, although it’s so easy I always have a jar or two of it laying around.
Using red onions creates a gorgeous pink relish that gives a pop of color. Take a sterile jar (we usually wipe it down with a damp cloth and hit it in the microwave for a few seconds), and a brine mixture of white wine or rice wine vinegar, salt, and sugar (to your taste–I like mine sweet), whole slices of fresh red onion, steeped for a few hours (up to 2 weeks in the fridge), and voila! The prettiest and most deliciously simple pink relish you could ever want.
