3. Southwestern Beer Can Chicken
This is a spicier version of beer can chicken. You can easily adjust the heat by using mild, medium, or hot chili powder. Here is what you need:
- 4 pound chicken
- 12 ounce can of beer
Rub:
- Tbsp of chili powder
- Tsp garlic powder
- Tsp cumin powder
- 1 ½ tsp salt
- Tsp of sugar
- Tsp black pepper
- ½ tsp allspice
To make:
Combine the spice ingredients in a bowl and set aside. Preheat the grill on medium heat. Wash the chicken and remove the neck and giblets. Blot dry. Use half of the rub to coat the entire chicken. Open up the beer and drink or pour out half. Place the rest of the rub inside of the can. Pierce the top of the can and then place the chicken over the top of it. Place the chicken onto the grill and close the lid. Cook for two hours or until chicken is cooked through. Remove and let rest for ten minutes. Carve and serve.
