2. Seeded Whole Wheat Loaf
For this seeded bread, you are going to take two types of flour: wholemeal bread flour (400g) and spelt flour (100g). Now you’re going to mix them in a bowl with 7g of fast-action dried yeast and a pinch of salt. For some more flavor, you’ll also add in a tablespoon of black treacle. Finally, 250ml of warm water until everything is combined. Stir all that together to make a nice and sticky dough, and splash on more water as needed (kneaded).
Now knead the dough on the floured surface for around 10 minutes. Once it is smooth and elastic, it is good to go. Leave it in a warm place to prove – it should take about an hour. Oil your tin ready.
Once that has doubled in size, add in 500g of mixed seeds, knead again for 3-5 minutes and then bake for 30-45 minutes at 180C. Glaze with egg yolk.
