
2 Cornbread Wedges
This one is even easier to make, taking just 15 minutes and resulting in bread that is light and easy to dip or eat with cheese.
To make it, you will heat the oven to 230C and then melt some butter in a pan to fry up some onion. Not tip your dry ingredients into another bowl: that’s a small 225g of fine cornmeal, 140g of plain flour, 1tbsp of sugar, 2tsp of baking powder, and a pinch of salt.
Beat the butter and eggs in a separate bowl and then stir this into the onion. Now pour that over the dry ingredients and stir until you have a batter. Pour into a cake tin and smooth with the top of a knife. Bake for 25 minutes and voila!
Of course you’ll then cut these into wedges prior to serving.
