3 Gluten-Free Banana Muffin
To make your gluten-free banana muffin, you are going to follow the same recipe and just tweak it ever so slightly.
This time, you will need:
- 75g of coconut flour
- 6 eggs
- 100g oil
- 80ml milk
- 1tsp baking powder
- 250g golden caster sugar
The main difference then, is that you are going to be using coconut flour instead of regular flour. This is an alternative that contains no gluten, and that is becoming increasingly popular with the gluten-free crowd.
You might also have noticed something else though: you are using considerably less flour than you would be if you were going with the regular kind. The reason for this, is that when you use gluten-free alternatives like coconut flour, they tend to be highly absorbent and gobble up lots of water. This causes them to increase substantially in size, and hence you don’t want to use quite as much as you normally would.
