3 Stuffed Pepper
A stuffed pepper is one of those fantastic ‘easy’ recipes that you can turn to when you want something that is quick, healthy, and surprisingly tasty. Not only does it tick those boxes, but it is also a great option to serve up to guests, seeing as it looks much more impressive than it has any right to!
To make stuffed pepper, you are going to take a red bell pepper, cut the top off, and then stuff it with a combination of quinoa, mince, tomato, and seasonings. You can mess around with the precise ingredients to make exactly what you want and to try out different flavors. A couple of sweet things like raisins can go particularly well in here. Now cover with a thin layer of olive oil or vegetable oil and bake in the oven on medium heat. It should crisp up a little and caramelize, leaving you with something that is delicious and fun to eat with a spoon.
