3. Grilled Guacamole
What you need:
- 3 ripe avocados
- 3 tbsp of olive oil
- Zest and juice from a lemon
- A clove of garlic, minced
- ¼ cup of chopped basil leaves
- ½ cup of grated parmesan
To make:
Heat a panini press to the highest setting or heat up a grill. Cut the avocados in half and remove the pit. Drizzle the avocado halves with olive oil and lemon juice and season with pepper and salt. Place avocado on grill or panini press. Cook until they have grill marks on them. Remove from the grill and scoop out the flesh into the bowl and mash with a fork. Stir in the lemon zest, garlic, olive oil, basil, and the parmesan. Mix the ingredients well so that the flavors become well blended. You can serve immediately or you can refrigerate for a few hours to give the flavors more time to meld.
