Sure, it might sound simple to just mix together some onions and tomato, but you have to bear in mind the fact that there are so many varieties of both ingredients.
Some varieties are so different from their relatives that they could be mistaken for an entirely different food item — and this has happened in the past. Try out new varieties for your pico de gallo. You could add in some sweeter tomatoes or change up the color of onion that you use. Regular onions are most prominent in pico de gallo, but you could also use yellow, red, or green onions to change things up and bring a new taste to your dishes. Never be afraid to try new things in the kitchen.
