INGREDIENTS

1-lb. Grass-fed lean ground beef.

1-can kidney beans – drained.

1-cup grated Colby-Monterrey Jack cheese.

2-tablespoons tomato paste.

1-onion, finely chopped.

¼-cup purified water.

½-cup coriander leaves – chopped.

1-large bag corn tortilla chips.

½-cup salsa.

1-teaspoon chili powder.

1-pack taco seasoning.

1-tablespoon olive oil.

Avocado – sliced for serving.

Sour cream and coriander for serving.

METHOD

Preheat the oven to 375F. Place a skillet over medium-high heat and add the oil. Toss in the onion and cook for a few minutes until it starts to turn golden brown.

Add the beef when the pans hot and cook for 8 to 10-minutes until no longer pink. Add the chili powder, kidney beans, tomato paste, seasoning, and water. Reduce heat and simmer on low until the sauce begins to thicken. Stir through the coriander.

Arrange chips on a platter, top with a thin layer of cheese, add the beef evenly, and top with the rest of the cheese. Cook in the oven for 10 to 15-minutes until the cheese melts and starts to brown.
