1. Make-Ahead Beef Stew
What you need:
2 lb chuck roast cut into cubes
Half tsp salt and half tsp pepper
1 tsp paprika
⅓ cup flour
1 yellow onion chopped
8 oz chopped mushrooms
3 potatoes sliced
5 carrots diced
2 stalks of celery chopped
2 cloves minced garlic
¼ of a cup of marsala wine
3 10.5 ounce cans of beef broth
A 14.5 ounce can of crushed tomatoes
1 tbsp Worcestershire sauce
1-ounce package of dry onion soup mix
2 tbsp water
2 tbsp of cornstarch
How to make:
Season the beef with salt, pepper, and smoked paprika. Toss the beef in flour and shake off the excess. Heat the olive oil in a skillet and add in the onion, beef, and mushrooms. Stir until the beef is brown and not pink. Drain and then add to the slow cooker.
Add in the carrots, celery, potatoes, wine, broth, Worcestershire, and the tomatoes. Stir in the rest of the remaining paprika and the onion soup mix. Cook for four to six hours on high. To thicken the stew, mix together the water and cornstarch and stir into the stew.
