1. Ultimate Green Bean Casserole
Here is what you need:
- 3 slices of thick-cut bacon, chopped
- ½ cup of yellow onion, finely chopped
- 2 cloves of minced garlic
- 12 ounces of cremini or button mushrooms, chopped
- 3 tbsp of butter
- 3 tbsp of flour
- A cup of half and half
- A cup of chicken broth
- ½ cup of shredded white cheese
- ¾ tsp of salt
- ¼ tsp of pepper
- A pound of fresh green beans, cut and blanched
- A can of French fried onions
To make:
Preheat oven to 350 degrees F. Place a large skillet over medium heat and add in the bacon. Cook until the bacon is crispy. Add in the onions and cook until translucent. Add in the mushrooms and the garlic and cook for a few more minutes. Transfer to a bowl. Melt the butter in the skillet and whisk in the flour.
Once this is combined, mix until it is a deep color. Add in the broth and half and half. Whisk constantly to prevent lumps. Once thickened, add in the cheese and whisk until it is melted. Add the bacon mixture back in and add salt and pepper.
Let it simmer for several minutes. Add in the green beans. Pour the mix into a casserole dish and sprinkle the fried onions over the top. Bake for 30 minutes, remove from oven and serve.
