3. Low-Carb Paleo Carbonara
Have you made a batch of “zoodles” yet? If you have a spiralizer in your kitchen, you never need to worry about pasta again. Zoodles come from zucchini, and they’re surprisingly firm with a pasta-like taste. This recipe blends zoodles with a delicious carbonara sauce and a poached egg.
INGREDIENTS
3-zucchinis, spiralized into zoodles.
4-slices honey-smoked back bacon.
2-large free-range eggs.
3-cloves minced garlic.
1-tablespoon heavy cream.
1/3-cup grated parmesan cheese.
2-tablespoons white vinegar.
1-tablespoon chopped basil for garnish.
METHOD
Take a large pan and render the fat from the bacon. Cook on low heat, turn when browned and crispy. Remove bacon from pan and set aside. Add garlic to the pan and a dash of olive oil to complement to bacon fat, cook until brown.
Add zoodles to the pan and cook till browned, about 3 to 5-minutes. Drain off liquid from pan and add the bacon, vinegar, cheese, and heavy cream. Stir until sauce thickens. Remove from heat and serve with a poached egg on top, garnish with chopped basil.
