2. Basic Spinach Quiche
Spinach is an ingredient that’s often understated, but it’s a great thing to be included in your diet if you’d like to up your vitamin and iron content – especially if you’re trying to replace meat in your diet. Spinach is best bought fresh, or grown at home, and you only need a good handful of spinach to turn it into an excellent quiche – wash it before you start, of course.
The base for the quiche recipe begins the exact same, with eggs, milk, salt, and pepper – but where you’d add ham and onions, you can instead add a mixture of chopped spinach and cheese, usually feta. This is put in the oven and then eventually finished off with a topping of cheese over it just like your basic quiche recipe, with just a little bit of spinach mixture into the base recipe.
Remember that spinach reduces greatly, and what seems like a large amount isn’t once it’s reduced fully.
