1 Basic Potato Pancake Recipe
Let’s start out with the very basic potato pancake recipe. This one is going to need:
2 eggs
2 tbsp plain flour
¼ tsp of baking powder
½ tsp of salt
¼ tsp of pepper
6 medium potatoes (peeled and grated)
80g finely chopped onion
60ml vegetable oil
Now you’re going to beat together the eggs, flour, baking powder, salt and pepper all together in a large bowl. Mix the potatoes in – remember that these should be grated.
Next, you’re going to mix the onion in which should be very finely chopped.
Heat the oil in a pan over medium heat, and then drop heaps of the potato into the mixture. Toss it around and press down to flatten. You’ll only need to cook for about 3 minutes on each side until the potatoes are brown and crispy. Add plenty of oil as you go, and drain that oil on the kitchen roll before you serve up.
