7. Mustard Glazed Salmon
What you need:
2 tbsp dijon mustard
2 tbsp white wine vinegar
2 tsp brown sugar
½ tsp salt
2 pounds of salmon cut into six-ounce portions
To make:
In a bowl, mix the vinegar, mustard, brown sugar, and salt. Spread this mixture onto each of the pieces of salmon. Cover the fish and then let it marinate for at least 15 minutes in the refrigerator. While the fish is marinating, place a cast-iron skillet or another type of oven-safe pan a couple of inches below the broiler. Preheat for about ten minutes. Remove the hot skillet from the oven.
Place the salmon fillets, skin side up in the pan. Broil the fish for about 2 minutes and then flip over and broil the other side for an additional couple of minutes. The salmon should be translucent in the thickest area of the fish. Remove from the pan immediately.
