8. Easy Salmon Teriyaki
What you need:
One pound of salmon
½ cup of soy sauce
2 tbsp mirin
2 tsp sugar
A tbsp vegetable or olive oil
To make:
Cut the salmon filet into four portions. In a container that is large enough to hold the pieces of a salmon mix up the mirin, soy sauce and the sugar. Stir until the sugar dissolves. Coat each side of the salmon with the mixture and then arrange the pieces of fish with the skin side up in the container.
Refrigerate for thirty minutes to an hour. Arrange the racks in the oven so that the skillet you will use to cook in will be as close to the broiler flame as possible. Preheat a heavy or cast-iron skillet on the stove until very hot. Remove the salmon from the marinade and brush with oil. Place the salmon with the skin up in the skillet. Place in the broiler and cook for one or two minutes. Flip the fish over, cook until it flakes easily with a fork. Serve with rice or another side dish.
