3. Feta Cheese Topped Red Lentil Soup
Full of fiber, B vitamins, and protein, there isn’t much bad to say about the humble red lentil. As a food item, it’s pretty flawless. When softened and complemented effectively, it’s also very tasty in the soup. If you’re on a tight budget but still looking to provide freshly cooked, healthy meals for the family, this red lentil soup topped with feta will serve you well, time and time again.
A base of boiling water and stock cubes can be seasoned with salt and pepper to taste, before adding the lentils and allowing enough time for softening. We’re keeping it simple with this one, so as to keep the cost down and really accentuate the taste of the lentils themselves.
A lot of chefs will happily use lentils, but very few celebrate them on their own, as they are. This recipe does, save for the sprinkling of crumbled feta on top of each serving, which looks just as good as it tastes.
