3. Delicious Mushroom Sauce
What you need:
- 2 cloves of minced garlic
- 1 onion, chopped
- Olive oil for sauteing
- 1 large package of mushrooms, finely chopped
- Tbsp of butter
- 1 cup of half and half or cream
- ⅛ cup of cognac
To make:
Saute garlic over medium heat in a tbsp of olive oil mixed with a tbsp of butter. Add in the chopped onion and mushrooms. Add salt and pepper to taste. Saute for about a minute. Divide the mixture in half. Use one half for topping the beef wellington. In another pan, melt a tablespoon of butter and add the reserved half of the mushroom mixture. Add in a cup of half and half or cream and ¼ cup of cognac. You can use brandy or a dry white wine instead if desired. Cook until the mixture is slightly reduced and thickens a bit. Add salt and pepper if needed. Serve the beef wellington with the mushroom sauce over the top.
