2. Tomatoes
The next most important ingredient for your Chicken Parmesan recipe is the tomatoes you will use for your tomato sauce. Without fresh, sweet, and juicy tomatoes, your tomato sauce will fall just as short.
We recommend using fresh, organic tomatoes; but, if you do not have access to them, using a paste tomato will work just fine. For paste tomatoes, we recommend Roma, a staple in Italian cooking. It’s popular for canning and making tomato paste, but less sweet than some other heirloom tomatoes. We also recommend San Marzano paste tomatoes, which are grown in the Valle del Sarno valley in Italy. It is denser and sweet, considered the class paste tomato by many.
If you are in an absolute rush, you can use a high-quality tomato sauce or marinara. Remember, however, the quality of your tomato sauce will determine the flavor profile of your Chicken Parmesan. No matter how many herbs you sprinkle on top, it is the tomato flavor that needs to shine through.
