3. Grilled Zucchini and Hummus Wrap
This innovative recipe is ready in minutes. The zucchini gives the wrap and chunky taste and mouth-feel. Hummus provides plenty of protein. Finish off the meal with a whole-wheat wrap. It’s ideal for lunch or your evening meal.
INGREDIENTS
1-large zucchini, sliced thick.
½-cup sliced onion.
½-cup ricotta cheese.
2-tablespoons grass-fed butter.
½-cup kale. Stemmed and shredded.
½-tomato, sliced.
2-large whole-wheat tortillas.
4-tablespoons hummus.
METHOD
Preheat oven to 375F. Place a skillet over medium heat and add the butter. Toss the zucchini and onions onto the skillet and fry until golden brown. Stir in the kale and cook until it wilts. While the zucchini cooks, place the tortillas in the oven and grill until the rack marks show.
Pull the tortillas from the oven and smear with hummus. Add the zucchini mix and ricotta cheese. Roll the tortillas tight. Place the sliced tomatoes on top and fold the tortillas. Place the tortillas on a baking tray and return to the oven for 2 to 3-minutes. Remove from the oven and serve warm.
