6. Sweet Potato Black Bean Burger
When new vegetarians have a meat craving, it’s typically for a juicy cheeseburger. Giving up meat isn’t easy when all your friends dive into the local in-and-out drive-thru window. Fortunately, our ingenious chefs came up with an idea for a vegetarian burger that tastes terrific. Our sweet-potato black bean burger will make you wonder why you didn’t go vegetarian earlier.
INGREDIENTS
1-can black beans, drained and dry.
1-cup cooked and mashed sweet potato.
1-cup cooked quinoa.
1-tablespoon ground flaxseed meal.
1-large free-range egg.
¼-cup chopped cilantro.
1-teaspoon red chili powder.
½-teaspoon cumin powder.
½-teaspoon dry oregano.
1/8-teaspoon garlic powder.
¼-teaspoon crushed Himalayan pink salt.
1-tablespoon fresh squeezed lime juice.
1-tablespoon avocado oil.
METHOD
Mix the flaxseed meal and the egg, whisk until frothy. Place all ingredients in the bowl and mash the beans. Place a skillet over medium to high heat. Add the avocado oil. Shape the burger patties and fry on each side for 5 to 7-minutes until golden brown and crispy.
