1. Easy Baked Omelet Muffins
What you need:
- 3 slices of bacon, chopped
- 2 cups of chopped broccoli
- 4 scallions, sliced
- 8 eggs
- A cup of shredded cheddar cheese
- ½ cup of milk
- Salt and pepper to taste
To make:
Preheat the oven to 325 degrees F. Grease a 12 cup muffin tin with butter or cooking spray. Cook the bacon in a skillet until crisp. Remove using a fork or slotted spoon and place on a paper towel. Keep the bacon grease in the pan.
Add in the scallions and broccoli and cook until soft. Remove from heat and allow to cool. Whisk the eggs, milk, cheese, salt and pepper together in a large bowl. Add in the broccoli and the bacon. Divide the egg mixture up among the 12 muffin tins. Bake for about 25 minutes or until they are firm to the touch. Let stand for about five minutes and then remove from muffin tin and serve.
