2. Classic Vegetable Lasagne
This is not classically what we consider to be a vegetable lasagne though! If you want to make a ‘proper’ vegetable lasagne, then all you need to do is to fry some nice chunky vegetables first and use these as the basis. There are no rules here and anything that goes with tomato will do a good job of replacing that mince/Quorn.
To start out then, we recommend trying this recipe with some red and green pepper, some red onion, some garlic, and some courgettes. Fry all this in a shallow pan with some oil and then add the chopped tomatoes, puree, stock, and seasoning as usual.
Again, it’s the exact same process. Take your vegetable mix and layer it at the bottom of the oven dish. Then layer on top some of the pasta sheets – breaking it as necessary to ensure it covers the entire surface area – then spread on the white sauce, and then sprinkle on the parmesan. Again, the top layer should include some cheddar as well for added effect.
