1. Zucchini Shrimp Scampi
What you need:
2 tbsp butter
1 lb shrimp, deveined and peeled
3 cloves minced garlic
½ tsp red pepper flakes
¼ cup chicken stock
1 lemon, juiced
Salt and pepper
1 and a half pounds of zucchini, spiralized
2 tbsp parmesan
2 tbsp parsley leaves, chopped
Melt the butter in a large skillet. Add the shrimp to the skillet. Stir in the garlic and the red pepper flakes. Cook the shrimp until they turn pink. This will take about two or three minutes. Stir in the lemon juice and the chicken stock. Season with some salt and pepper to taste.
Bring the mixture to a simmer and then stir in the zucchini noodles. Mix until everything is well combined, about a minute or two. Serve the dish immediately. Garnish with some parsley and parmesan if desired. You will love this shrimp scampi and will not miss the pasta!
