3. Greek Stuffed Chicken
This recipe takes Greek flavors to a whole new level. The chicken is the perfect way to highlight these flavors and enjoy them.
Ingredients
- Extra-virgin olive oil
- Lemon juice
- Chopped dill, plus more for garnish
- Chopped parsley, plus more for garnish
- Cloves garlic, minced
- Kosher salt
- Freshly ground black pepper
- Skinless, boneless chicken breasts
- Zucchini halved and thinly sliced
- Medium tomatoes, halved and thinly sliced
- Red onion, sliced into half-moons
- Lemons, halved and thinly sliced
- Crumbled feta
- Shredded mozzarella
Directions
- Turn the oven to 400 degrees and allow it to heat up.
- Add the chicken to the cutting board and make a slit on each side. Do not cut through it the chicken.
- In a bowl, which the olive oil, lemon juice, dill, parsley, and garlic. Drizzle the mixture of the chicken breast.
- Add salt and pepper to both sides of the chicken.
- Stuff the chicken with the zucchini, tomatoes, red onion, and lemons.
- Add crumbled feta cheese and mozzarella cheese to the top.
- Bake the chicken until it’s not pink anymore.
- Add it to a serving platter and garnish with the dill and parsley before serving.
