2. Black Bean Frittata
What you need:
- 4 eggs
- ¼ cup cottage cheese
- ½ tsp of cumin
- Salt and pepper to taste
- 15 oz can of black beans, drained and rinsed
- ½ cup corn kernels
- ½ cup peas
- Tbsp of chopped basil
- 2 tsp olive oil
- 2 cups of baby arugula
To make:
Heat the oven to 375 degrees. In a medium bowl, mix the eggs, cottage cheese, and the cumin together. Season with some salt and pepper. Add in the beans, corn, basil, and peas. Stir to combine and set aside. In an oven safe skillet, heat olive oil over medium heat. Add in the arugula and stir until wilted. Add in the egg mixture. Stir until arugula is evenly distributed throughout. Transfer the skillet to the oven and bake for about 30 minutes or until it is cooked through and lightly browned over the op. Cool for about ten minutes and then cut into 4 wedges.
