3. Gnocchi with Fresh Basil and Tomato Sauce
What you need:
- ½ cup of olive oil
- 4 chopped carrots
- A medium onion, chopped
- 2 28 oz cans of whole tomatoes
- 2 cloves of garlic, minced
- Tbsp of salt
- 2 tsp of sugar
- Package of gnocchi
- Fresh basil leaves for garnish
To make:
In a saucepan, heat olive oil over medium heat. Add in the carrots and the onions. Saute until onions are softened. Add in the garlic and the tomatoes. Bring to a simmer and cook for about 30 minutes or until the sauce reduces slightly. Remove from heat and place in a food processor. Puree until it is smooth.
Season with salt and sugar to taste. Prepare the gnocchi according to the package directions. Remove from water using a slotted spoon and place in a bowl. Pour the tomato sauce over the gnocchi. Serve garnished with fresh basil leaves. You can use whole leaves, or crush them and mix them into the sauce.
