3. New Mexico Sopapillas
If you want something that is soft, crispy and full of flavor, try this recipe. These sopapillas are the perfect snack, and they are great when dipped in ice cream or sprinkled over your favorite cake.
Ingredients
- Vegetable oil
- Plain flour
- Baking powder
- Salt
- Butter
- Water
- Ground cinnamon
- Caster sugar
Directions
- Turn on a burner and heat the oil
- In a bowl, mix the flour, baking powder, and salt.
- Add the butter and mix until it turns to crumbs.
- Add water and use your hands to knead the mixture into a dough.
- Divide into four sections and roll each section into a ball.
- Cut the ball into wedges and fry the wedges.
- In a bowl, mix the sugar and cinnamon and set aside.
- Remove the wedges from the oil once they have puffed and drain on paper towels.
- Roll them in the cinnamon and sugar and serve.
