1. Asparagus Barley Risotto
Risotto can be time-consuming to make as it requires a lot of stirring and attention. Here is an easy way to make it in the slow cooker.
For Asparagus Barley Risotto you will need:
2 tablespoons olive oil
1 large onion chopped
Salt and pepper to taste
1 and a half cups pearled barley
Fresh thyme, 2 sprigs
3 cups vegetable broth
1 pound asparagus cut into one inch pieces
⅔ cup parmesan
Zest of a lemon
¼ cup chopped parsley
¼ cup chopped fresh mint
To Make:
Heat the olive oil in a skillet over medium heat. Add in the onions, salt, and pepper. Cook until onions are slightly browned. Add in the thyme and barely. Cook until the barley is golden. Add the mixture to the slow cooker. Pour in the broth, a cup and a half of water, and a pinch of salt. Cook on high for around 3 hours. Remove the thyme and add it to the asparagus. Cook for about thirty more minutes, or until the asparagus is tender. Add in the lemon zest, parmesan, and salt and pepper to taste. Fold in the mint and parsley. Add water if necessary to thin it out.
