2. Slow Cooker Roast Beef and Gravy
This is a wonderful convenient slow-cooker dish that is a no-fuss way to serve roast beef. It freezes quite well too. Simply put the meat in a freezer container and top with the gravy. Make sure it is cool before freezing. To un-freeze, put in the refrigerator for several hours.Heat in a saucepan and add a little water, if needed.
3 pounds of chuck roast
½ cup of sherry or beef broth
2 10 ounce cans of cream of mushroom soup
1 packet of onion soup mix
Slice the roast into two pieces. Put it in a 3 quart slow cooker. Combine sherry or broth, soup and onion mix in a bowl and pour over the roast. Put the slow cooker on a low setting for 8 to 10 hours. The meat should be tender at the end with a rich, thick gravy.
