3. Eliminate Egg Whites
When it comes to making French toast, most of the time a recipe that you are looking at is going to call for at least two whole eggs. However, using a whole egg is not going to give you that perfect texture that you are trying to achieve with your French toast. The reason for this is because the whites of the eggs contain sulfur compounds.
These sulfur compounds are what make the eggs taste like eggs. Essentially, when you use the whites you often will find that your French toast will taste like scrambled eggs with some bread mixed in. if you eliminate the egg whites and simply soak the bread in just the yolks, you will get rid of that flavor. This allows the other ingredients such as cinnamon and other spices to shine through. You can further enrich the flavor of the French toast by adding some melted butter to the egg yolks.
