
The pot roast is in many ways a perfect meal. This is a recipe that is incredibly quick and easy to make, that requires very little in the way of crockery and washing up (just one pot… fancy that!) and that is packed with healthy ingredients. It’s also very tasty when done right, though it is fiendishly easy to get wrong.
In the best-case scenario, a pot roast will turn out to be a creamy, meaty type stew with delicious vegetable pieces and potato. It will be filling, satisfying, and tasty. In the worst-case scenario though, it can taste watery with large bits of stringy meat floating in it. This latter result is pretty much what we’re trying to avoid. So how do you make the ultimate classic pot roast? 1. Chicken Hot Pot
The first and simplest hot pot we’re going to look at making is a simple chicken stew with veg. To make this, you’re going to fill a large with boiling water about halfway. Now add in your chicken – a few breasts or thighs diced and deboned depending on how many people you will be feeding. Leave this to boil.
Meanwhile, chop the veg. You’re going to be chopping potatoes (skinned and quartered), carrots (skinned and sliced), onions (into slices), garlic (chopped), and a few spring onions (sliced). Add all of this into the pot and allow to simmer for a while.
Next, add some chicken stock, some Bisto gravy granules (chicken), some Maggi (a type of beef stock), and some thickening granules until it is the right consistency.
This is a relatively plain pot roast, but it is a classic, and extremely simple to make.
