2. Mediterranean Couscous Salad
What you need:
- ¼ cup o white wine vinegar
- 4 tsp of lemon juice
- 2 tbsp of sugar
For the salad:
- A cup of dry couscous
- ½ cup of diced red onion
- 1 cup of chopped cucumber
- 2 cups of chopped tomatoes
- ¾ cup feta cheese
- 3 tbsp of Italian seasoning
- 3 tbsp of sliced basil
- Tsp of garlic powder
- Salt and pepper to taste
- 2 tbsp of balsamic vinegar
To make:
In a pot, bring 1 ¼ cups of water to a boil. When the water is boiling add in the couscous. Cover and then remove from the heat. When the couscous is sitting, cut up the cucumbers, onions, and tomatoes. In a bowl, whisk the lemon juice and white wine vinegar together. Place in the microwave for about 15 seconds to warm. Add in the sugar and then stir until it is dissolved. Set it aside. Remove the lid from the pot and fluff couscous. Move to a bowl and then add in the chopped veggies, the feta, Italian seasoning, garlic powder, and the basil. Mix until combined. Pour the vinegar mixture over it and mix well. Season with salt and pepper. Drizzle balsamic vinegar over the top and serve.
