This recipe for pure-lemon pound cake comes straight out of the South. Made with lemon zest, lemon juice, and topped with a lemon buttermilk glaze – this dessert is a bittersweet lemon lovers delight.
INGREDIENTS – Cake
3-cups all-purpose flour.
6-large free-range eggs.
1-½-cups grass-fed butter.
8-oz. Cream cheese.
3-cups brown sugar.
1-teaspoon salt.
1-tablespoon vanilla extract.
2-tablespoons lemon juice.
Zest of one lemon.
INGREDIENTS – Lemon Buttermilk Glaze
1-tablespoon buttermilk.
1 1/2 cups confectioner’s sugar.
Zest of 1 lemon.
2-tablespoons lemon juice.
METHOD
For the Pound Cake.
Preheat the oven to 350F.Prep a bundt tin or tube pan with grass-fed butter and dust with flour then set aside.
Add the cream cheese, butter, sugar, and eggs to a large mixing bowl, whisk until fluffy. Add the vanilla, salt, and flour, keep whisking till combined. Pour the cake batter into the bundt tin and bake in the oven for 75 to 90-minutes until golden brown. When you pass a toothpick through the cake, it should come out clean.
For the Buttermilk Glaze.
Whisk together the lemon juice, sugar, zest, and buttermilk until fluffy. Set until the cake cools, then drizzle over the top of the pound cake.
