2. Light Lemon Pound Cake

INGREDIENTS – Cake
2-¼-cup cake flour.
1-cup plain nonfat yogurt.
2-large free-range eggs.
5-tablespoons grass-fed butter.
1-cup brown sugar.
½-teaspoon baking soda.
1-½-teaspoon baking powder.
¼-teaspoon salt.
¼-cup lemon juice.
1-tablespoon grated lemon zest
METHOD
Preheat the oven to 350F. Coat a bundt tin with grass-fed butter and set aside. Mix the lemon juice and yogurt in a medium mixing bowl until fluffy, then set aside.
In a large mixing bowl, beat the butter, sugar, baking soda, baking powder, lemon zest, and salt with the mixer on low speed. Beat in the eggs and egg whites until smooth. Add the flour and the yogurt, keep beating.
Add the batter to a cake tin and bake for 30-minutes until a toothpick passes cleanly through the cake.
