3. Vegan Gelato
Ingredients:
- 3 1/2 cups coconut milk, divided
- 1/2 cup coconut water
- 3 tablespoons cornstarch
- 1 cup superfine sugar
- 1 teaspoon pure vanilla extract
All my vegan friends can agree that they miss gelato! So I figured it would be important to include a vegan alternative to gelato that truly tastes the same. Finding vegan desserts can be a challenge because many lack the rich, full taste that you get with dairy. This recipe utilizes coconut milk and coconut water to produce a rich and creamy taste. With a prep time of 20 minutes and a total time of 1 hour 20 minutes, this will yield a quart of ice cream.
In a small bowl, add 1 cup of coconut milk and water mixture with cornstarch and sugar. In a medium saucepan over medium heat, combine the remaining cups of coconut mixture and vanilla extract. Remove from heat, chill, and refrigerate. Stir in your chosen flavor. We recommend mint, chocolate, vanilla, or fresh fruit. Your gelato mixture is ready to be frozen. Transfer the mixture into your ice cream maker and freeze. When it is done, transfer to freezer containers.
