2. Slow Cooker Creamy Chicken Tortellini Soup
If you have a slow cooker, you know how pleasant it is to come home to the fresh soup after a hard day of work and the commute home in the wind and rain. Even on a sunny day, this tortellini soup is a nutritious, easy and fuss-free meal. This is a great way to dress up chicken soup and make an entire meal out of a soup. Consider a dollop of creamy pesto atop each serving of this creamy chicken soup.
- 1 pound chicken thighs
- 9 ounces sliced mushrooms
- 1 teaspoon thyme
- 1 teaspoon garlic powder
- ⅓ cup chopped onions
- 3 cups chicken broth
- 1 cup cream
- 9 oz dried cheese tortellini
Put chicken broth, chicken, mushrooms and spices in a slow cooker. Cook on low for 6-7 hours or high for 3-4 hours. Stir in cream and tortellini. Cook on high for an additional 30 to 45 minutes until the noodles are soft.
