3. Tortellini Carbonara
Carbonara combines a rich, creamy texture and flavor with the crunchy, hearty taste of cooked bacon. If you like, add peas for extra freshness and flavor. Traditional carbonara uses eggs. If you would like this, replace half the cream with whisked eggs, but add them away from the flame so you don’t end up with scrambled eggs.
1 9 ounce package of tortellini
10 bacon strips
1 cup heavy cream
1/2 cup fresh parsley rinsed and chopped
½ cup of parmesan cheese, best if freshly grated
Boil tortellini in salted water. Follow the directions on the package for exact timing. Cook bacon strips until crisp. Place the bacon on paper towel-lined plate to drain, but use the same pan after you pour off the drippings. In the pan, add cream, cheese, bacon cut into slices and the cooked tortellini. Serve right away.
