2. Golden Roast Potatoes
Perfect golden roast potatoes are an essential element of any Christmas dinner. Follow this quick recipe and roast these golden nuggets of flavor to perfection every time.
INGREDIENTS
8-large potatoes, peeled and quartered.
1-cup coconut oil.
1-teaspoon crushed Pink Himalayan salt.
1-tablespoon chopped fresh rosemary.
METHOD
Preheat the oven to 425F. While you wait for the oven to reach temperature, fill a saucepan with water and bring to the boil. Add a teaspoon of crushed Himalayan pink salt to the water and let it dissolve. Toss in the potatoes and blanch for 10-minutes until fork tender.
Drain the potatoes and leave them to steam off for another 5-minutes. Grease a roasting tray with coconut oil and set it in the oven, remove after melting and add the potatoes. Mix them around until they have a consistent covering and return to the oven for 45-minutes until golden brown and crispy. Remove from the oven and toss with fresh rosemary before serving.
