30 Oreos 4 tbsp melted butter For the cheesecake: 3 eight oz packages of cream cheese at room temp. 1 ⅓ cups of sugar 16 oz sour cream ¼ cup plus a tbsp of flour Tsp vanilla extract 1 cup mini chocolate chips ½ cup mint chips For the Ganache: ½ cup of chocolate chips ⅓ cup mint chips ¾ cup heavy cream Oreos for garnish
To make:
Heat oven to 325 degrees. Wrap a 9-inch springform pan in 2 layers of foil. Spray inside with cooking spray. Crush the cookies and then stir in the melted butter. Press into the bottom of the pan. Place a pan of water on to boil. Beat the cream cheese in a mixer until smooth. Add in the sugar and sour cream. Add in the eggs, ¼ cup of flour, and vanilla beat until smooth.
Mix the chocolate chips and mint chips in a bowl with some flour. This helps them not sink to the bottom. Pour into cream cheese mixture. Pour the mix into the springform pan. Place pan in a large baking dish. Pour the boiling water around it. Bake for 75 minutes. Cover and allow to cool for at least 12 hours before serving. Melt the chocolate candies and then pour over the top of the cheesecake to serve.
