4. Classic New York Cheesecake
What you need:
1 ¼ cup chocolate wafers, crushed
½ cup walnuts, chopped
⅓ cup sugar
½ cup melted butter
2 eight oz packages cream cheese, softened
3 tbsp sour cream
⅓ cup sugar
2 eggs, beaten
½ cup evaporated milk
Tsp lemon juice
2 cups sour cream
5 tbsp sugar
Tsp vanilla extract
To make:
Combine the crushed cookies, walnuts, and sugar in a bowl. Stir in the melted butter. Pour into a 10 inch pan and then freeze for 15 minutes. Preheat oven to 350 degrees. In a bowl beat together the cream cheese, 3 tbsp of sour cream, and sugar until smooth.
Add the eggs, then the milk and lemon juice. Beat until combined. Pour into frozen crust. Bake for 40 minutes or until the cheesecake is set. Mix the sour cream, vanilla, and sugar together and pour over the top of the cheesecake. Bake for 10 more minutes. Remove from oven and cool. Refrigerate until completely chilled. Serve with your favorite toppings.
