12. Simple Smashed Garlic Crispy Potatoes
What you need:
15 baby red potatoes
Salt
½ cup olive oil
6 cloves garlic, minced
What to do:
To prepare this dish you are going to need to boil the potatoes in a large pan. Place the potatoes in a large saucepan and cover with water. Add in some salt. Bring the water to a boil and then reduce to a simmer. Cook the potatoes until soft and can be pierced with a skewer. Make sure that you do not over cook the potatoes. When the potatoes are cooking, set up some clean dish towels on your counter.
When the potatoes start to finish cooking remove them one at a time and then place on a dishtowel. Let the potatoes cool and then flatten with a spatula or a fork. Place the flattened potatoes onto a baking sheet. Cook the garlic in a bit of oil until browned. You can add other seasonings as well. Once the garlic is cooked, use the oil mixture and drizzle over the potatoes. Cook the potatoes for about 30 minutes in a 425-degree oven.
