3. Lemon Drizzle Muffin
You know lemon drizzle cake, so why not make a lemon drizzle muffin as well? This is very simply a muffin that has been turned into a lemon drizzle cake and the way we’re going to do this is by cooking the muffin first and creating a perfect, solid little cake. From there, you’re then going to chop the bottom off around halfway up and you’re going to spread liberal amounts of lemon curd inside. You can then add some lemon drizzle (Iemon sauce, or maybe lemon syrup) on top. Finally, you’re going to dust it off with lots of sugar.
The result is something that is sweet but with the citrus, tangy flavor of lemon coming through and offsetting that. You can also add to this by using some of the lemon juice in the mix itself, or by using a little lemon rind – or both.
