2. Tortellini Chicken Soup with Spinach
Chicken soup is a universal favorite and is the first thing people crave when they want to feel better. This chicken soup has a Mediterranean feel with the addition of tortellini, spinach and basil. It is itself a meal and is filled with vitamins and minerals. If you are pressed for time, using canned broth and frozen spinach, but for a fresher taste, make your own chicken soup as a base and add the tortellini and spinach.
30 ounces of chicken broth
10-ounce package of frozen spinach or
- 1 (10 ounce) package frozen chopped spinach
- 3 cups of fresh spinach
- 8-ounce package cheese tortellini
- Bunch of fresh basil
- 1/4 tablespoon garlic powder
- salt and pepper to taste
Put chicken broth in a pot and stir in tortellini. Simmer for at least 10 minutes until the tortellini is tender. Add spinach, basil, garlic powder, salt, and pepper.
