INGREDIENTS
10-asparagus spears.
½-cup uncooked brown rice.
½-lbs. Boneless and skinless chicken breasts, cubed.
1-teaspoon chicken bouillon granules.
1-1/2-cups water.
2-tablespoons chopped parsley.
1-tablespoon fresh squeezed lemon juice.
2-teaspoons coconut oil.
1-1/2-teaspoons dill.
1/8 teaspoon crushed Himalayan pink salt.
METHOD
Place a saucepan over high heat and bring 1-cup of water to the boil. Add the rice and the chicken bouillon, reduce the heat and let the rice simmer for 10 to 15-minutes until rice is tender.
While the rice cooks, combine the lemon juice, parsley, oil, salt, and dill in a medium mixing bowl and set aside. Place a skillet over medium heat and add another cup of water. Bring to the boil and add the asparagus. Cook for 2-minutes and then drain from the skillet, place in ice water for a few seconds to cool and pat dry with kitchen towels.
Saut5ee’ the chicken in the skillet and then add the spice mix, combine well. When cooked, add the rice and asparagus to the pan and toss until combined. Cook for 5-minutes and serve warm.
