1. Oven-Roasted Squash
The classic way to prepare any summer squash. Simple ingredients, a few spices, and time in the oven are all you need to get this recipe right.
INGREDIENTS
2-large yellow squash.
4-large zucchini.
2-teaspoon garlic powder.
½-teaspoon cracked black pepper.
¼-cup parmesan cheese – grated.
Olive oil spray.
METHOD
Preheat the oven to 350F. Skin the squash and the zucchini – chop into large chunks. Grease a baking tray with grass-fed butter. Add the squash, season with salt and pepper. Spray a light coat of olive oil over the squash.
Cook for 35 to 40-minutes in the oven until fork-tender. Remove from the oven and sprinkle with the parmesan cheese and garlic powder. Return to the heat and wait for 3-minutes for the cheese to turn golden brown.
Remove from the oven and let the squash cool for a few minutes before serving warm. Garnish with cracked black pepper to taste.
