This fact may come as a surprise, but did you know that squash is a fruit and not a vegetable? Squash has a history as one of the oldest cultivated, and it’s one of the largest groups of food. There are so many different varieties of squash, but the most common types that you’ll find in our recipes include summer, acorn, and butternut squash. However, squash covers many other different vegetables including pumpkin, courgettes, zucchini, and marrows.

1. Oven-Roasted Squash
The classic way to prepare any summer squash. Simple ingredients, a few spices, and time in the oven are all you need to get this recipe right.
2-large yellow squash.
2-teaspoon garlic powder.
½-teaspoon cracked black pepper.
¼-cup parmesan cheese – grated.
Olive oil spray.
Preheat the oven to 350F. Skin the squash and the zucchini – chop into large chunks. Grease a baking tray with grass-fed butter. Add the squash, season with salt and pepper. Spray a light coat of olive oil over the squash.
Cook for 35 to 40-minutes in the oven until fork-tender. Remove from the oven and sprinkle with the parmesan cheese and garlic powder. Return to the heat and wait for 3-minutes for the cheese to turn golden brown.
Remove from the oven and let the squash cool for a few minutes before serving warm. Garnish with cracked black pepper to taste.
