2. Tacos
Speaking of guacamole, and Mexican food in general, tacos is another fun and easy option for vegetarian meals. There are tacos that are not vegetarian, but the point is that the recipe of tacos itself is merely “tortilla with stuff inside of it”, so you can make your own tacos with vegetarian ingredients and find your favorite combinations. You can buy tortillas at the supermarket or a Mexican food shop, or you can make them yourself.
Get 4 cups of flour, and whisk it with salt and 2 spoons of baking powder. Then integrate 2 tablespoons of lard, and finally pour a cup and a half of water. Knead until it feels nice and shape it as disks of your desired size, and bake until it looks golden both sides. Then choose your favorite ingredients: tomato, pepper, avocado and onion are the classics, but you can get creative and include a wide range of vegetables and grains.
