1. Scallops Benedict with a Brown Butter Hollandaise
What you need:
- Biscuits for serving
For the hollandaise:
- 3 egg yolks
- ½ tsp of yellow mustard
- 2 tbsp of lemon juice
- 1 tsp of lemon zest
- ½ cup of hot brown butter
- 1 tbsp of chives, chopped
Additional ingredients:
- 24 large scallops
- 2 tbsp of butter
- 2 tbsp of olive oil
- 9 eggs, scrambled and cooked
- 12 slices of bacon, cooked and chopped
To make:
First, brown the butter by simply melting it in a pan over medium heat until the color turns brown. Pour into a measuring cup and leave the sediment behind. In a blender, mix the mustard, egg yolks, lemon juice and lemon zest for a few seconds. Pour the butter into the mixture slowly. Blend on medium speed until the sauce thickens. Pour in a bowl and keep the bowl warm using a hot water bath.
Season the scallops with some salt and pepper and sear them in a hot skillet. Slice one of the biscuits in half and use a piece as a base. Add the prepared scrambled eggs, top with the scallops.
