2. Party Pumpkin Pie
Are you inviting guests around for a festive dinner party? Serve them this party-sized pumpkin pie for dessert.
INGREDIENTS
1-pie crust.
2-cans pumpkin puree.
1-¼-cups whole raw milk.
1-¼-cups heavy cream.
4-large free-range eggs.
1-teaspoon fresh ginger – grated.
½-cups granulated sugar.
1-cup brown sugar.
2-teaspoons pumpkin pie spice.
1-teaspoon Himalayan pink salt.
Whipped cream – for serving.
METHOD
Preheat the oven to 350F. Grease a baking tray and set aside. Place the pie dough on a floured work surface. Lightly flour the dough and roll into a rectangle 12×10-inches. Wrap the dough around a rolling pin and transfer to the tray. Roll the remaining piece of pastry and place on the other half of the baking sheet. Overlap with the first piece, pressing the seam together to seal. Bake in the oven for 14-minutes.
In a large saucepan, cook the ginger with the pumpkin on high for 10-minutes – frequently stir to prevent sticking. Remove from the heat and allow to cool slightly.
In a large mixing bowl, add the milk, cream, eggs, sugar, pumpkin pie spice and a pinch of salt –whisk until smooth. Pour mixture into the prebaked pie crust and bake for 15-minutes until set. Serve with fresh whipped cream.
