1. Sweet Potato Tortillas
2 cups of spelt flour
Tsp sea salt
2 cups of cooked and mashed sweet potato
To make:
Cook your sweet potatoes either in the microwave for about ten minutes or until tender or bake them in a 400-degree oven for about an hour. Once the sweet potatoes are cooked, allow them to cool until you can touch them and then remove the skins. Combine the flour and the salt in a mixing bowl. Add in the sweet potatoes. Knead the mixture working the flour into the potato. Add extra flour if it is too wet. Once combine, allow the dough to sit for at least 5 minutes. Dust a surface with flour and then roll the dough into a log. Divide dough into 18 to 20 portions. Roll portions into balls with your hands. Roll the balls out until they are about an eighth of an inch thick. Heat a skillet over low heat and add the rolled out tortilla. Cook for about a minute on each side. Stack and keep covered until ready to eat.
